About Eric
Eric Lujan is a Chef, Elite Triathlete, Personal Trainer, Fitness Writer, and Certified Sports Nutritionist. Eric grew up in the farming village of Llanito, bordering the Pueblo of Santa Ana in New Mexico. Eric is regarded as one of the top endurance athletes in the United States and has represented the United States at the professional level of triathlon in the US, Europe, & Asia over the last seven years.
A lifelong resident of the kitchen, Eric’s culinary creations have provided him with abundant energy and high performance during his entire pro triathlon career. Specializing in maximizing nutritional value, whilst not compromising on taste, Eric’s recipes are delicious, sustainable, and promote health. Eric believes that food should taste fantastic, while making you feel great and energized!
Today, Eric spends his days in the New Mexico Outdoors swimming, cycling, & running. Apart from grueling triathlon training, Eric operates a personal training and food coaching business, which specializes in consultation and training for a wide variety of athletes, kids, corporations, and Native American Tribes.
